Characteristics
The cheeks are small pieces of lean meat with defined fat marbling. They are located in the animal’s jaw, meaning they are exercised muscles; this, together with the amount of intramuscular fat they contain, makes them incredibly juicy and succulent. They are delicious when stewed, roasted and also grilled.
