The pork loin is taken from the strip of meat that goes from the hip to the animal’s shoulder. It is the same piece where the chops are taken from, but without the bone. The pork loin fillets from our Duroc pig are identifiable by their fine marbling of intramuscular fat, which makes them very tender.
